For us, eating is a pleasure. And a real travel experience that cannot be separated from the taste. From the creative inspiration of Michelin-starred chef Andrea Ribaldone comes the food concept for JSH catering. Under his guidance and supervision, the Acaya chef has developed new recipes for the 2018 season. The delicious selection of dishes is the result of research, passion, experience and creativity. It is a long process that finally arrives at the table, and there reaches its highest expression. Full of surprise and delight.

Gabriele Castiello also attended the Campus for JSH Chefs held last February at Galzignano Terme. Young and passionate, he brought his suggestions and creativity to the tables of the campus in the presence of the other chefs and the deus ex machina of the JSH food project, Andrea Ribaldone, and won everybody over with his dishes that mix tradition and innovation, knowledgeably combining the unmistakable tastes and flavours of Salento with more international and contemporary notes. Fresh, Italian and simple dishes that will also win over the finest palates.

RECIPE OF THE MONTH

"POLPO IN PIGNATA" OCTOPUS SOUP

Serves 4
• Fresh octopus 500 gr
• Red tomatoes #4
• Red onion #4
• Celery green #4
• Clove garlic #1
• Bunches parsley #1
• Croutons
• Pepper to taste
• Salt to taste
• Extra virgin olive oil #3 tablespoons soup


Method: Buy from your fishmonger a fresh octopus of about 500 grams, once washed follow this indications: dice the fresh octopus into cubes, slice the ​​red onions once cleaned, dice only the coasts of celery, clean the garlic, wash and cut the red tomatoes into wedges like for the salad, chopped parsley.
For cooking: put 3 tablespoons of oil in a pot, add half a chopped garlic, thinly sliced ​​red onion, diced celery and tomatoes, cut into wedges. Let simmer for 10 minutes with a lid, stirring occasionally. After 10 minutes all the ingredients will be withered, you can now add the main ingredient: the octopus. Cook for about 12/15 minutes and only in the end complete adding salt, chopped parsley and a pinch of pepper. Now the octopus is ready to be served with the croutons, a pinch of chopped fresh parsley and a drizzle of olive oil. Enjoy!
